The best hotels complement their surroundings – you wouldn’t expect to see the stone walls of Ireland’s Castle Leslie on a beach in Mexico, or a resort hotel with extensive outdoor pools and landscaped grounds in the centre of Rome (though we came close at the Hotel Cavalieri).
